Homemade Eggnog Recipe for Christmas & New Year's Eve

by

Are you looking for a way to impress your family and guests with a delicious and easy eggnog recipe that won’t get them schnockered? Try this recipe.

In my experience, family members are more enjoyable to be around when they haven’t been drinking, so in order to prevent blow-ups and family feuds (not really) I came up with an alcohol-free (mostly alcohol free) version of one of my favorite holiday drinks.

I used imitation Rum extract instead of the real rum. There is a little alcohol still in the imitation rum, but the imitation rum makes it more kid friendly. For all you crafty gift-givers, this would be an awesome DIY Christmas Gift for friends, family, neighbors, etc. Just buy a few adorable glass bottles, print these perfect eggnog labels, use some Baker’s Twine and you have yourself a wonderfully easy and fun Christmas gift-giving experience. I might also throw in some cookies, for good measure. 🙂

Lindsey’s Famous Homemade Eggnog Recipe

Ingredients

  • 4 egg yolks
  • 1/3 cup sugar, plus 2 tablespoons
  • 1 pint skim milk (or milk of your choice – I will try this recipe with coconut milk and make a few adjustments to make this even healthier, so stay tuned!)
  • 1 cup heavy cream
  • 1 Tbsp imitation Rum extract
  • 1 teaspoon freshly grated nutmeg
  • 4 egg whites*

Directions

In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup + 1 tbsp sugar (save the other tbsp of sugar for the egg whites) and continue to beat until it is completely dissolved. Add the milk, cream, rum extract, and nutmeg and stir to combine.

Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.

Whisk the egg whites into the mixture. Chill for an hour then serve.
